About

Personal Beliefs

With a deep reverence for the seasonality of Japanese produce, Chef Araki has an innate appreciation for ‘kisetsukan’ and is commited to using each ingredient at its peak.

Approach at Esora

Chef Araki marries modern techniques with Japanese traditions to capture the natural flavours of each ingredient. Drawing from his reservoir of experiences and memories in Japan, Chef Araki skillfully creates seasonal dishes that are both innovative and nostalgic.

Background

Born in Hiroshima, Chef Araki discovered his passion for the culinary world early in life. As a student, he was fascinated by ‘small cooking’ and enjoyed creating things. His journey began as a humble izakaya cook in Kyoto during university, followed by four transformative years at the prestigious three-Michelin-starred Nihonryori RyuGin in Tokyo. Chef Araki’s personal style draws from his diverse experiences in European cuisine, from mastering rustic Italian dishes to Japanese-inspired French fare. A distinct culinary voice, he’s now the Head Chef of one-Michelin-starred Esora.
